Game Day Recipe and “Cheesy” Halftime Commercial

It’s almost time for an exciting Game Day! I’ve loved football all my life, and I plan on being glued to the TV on Sunday. But before I plant myself on the sofa, I’m getting ready now for game day entertaining by planning my menu. A big game party wouldn’t be a party without awesome food, would it? I’m going to break out my Mexican layer dip and add a twist on it now that I’ve discovered Ricos Cheese.

Game Day recipe | Cheering for the big game is easier on a full stomach, and Ricos has some great products to make entertaining easy peasy nacho cheesy.

I grew up in the South, and I know my football. Like down to the names of the players and who plays for which teams. So when it comes to my big game party planning, it’s a BIG deal! Naturally, appetizer dishes and food that’s easy to both hold and eat without utensils are #1 for big game parties. So my mind always goes to things like wings, buffalo chicken dip, and NACHOS! Speaking of nachos, TRIVIA TIME…Game Day recipe | Game Day trivia on who created concession nachos-Ricos' very own Frank Liberto!

I had no clue, but now I feel I owe Mr. Liberto a huge debt because I love nachos. All I had to do was crack open a can of Ricos Premium Nacho Cheese, warm it, and pour it over tortilla chips. Add jalapenos and VOILA: perfect nachos!

Another staple in our home is Macaroni and Cheese (my son’s favorite food group). So Ricos Premium Cheddar Cheese turns an ordinary mac and cheese into the cheesy consistency my tween loves.

Here’s another money-saver tip: Ricos Condensed Cheddar Cheese (aka the “Profit Maker”) can be mixed with either water, pepper juice, or salsa, and it will yield over 50% more product! Who doesn’t love saving money and getting more bang for a buck?!

Game Day recipe | Ricos products are easy to heat and serve and trans fat free with no hydrogenated oils.

Ricos products are sold at Wal-Mart, but don’t be surprised if like mine some of them were all sold out–they are that popular! The big score was finding the nacho cheese cups to pack in school lunches-those have been a BIG hit with my kids.

All this talking about food has got me hungry, how about you? So here’s an easy dish that will be a total touchdown for a big game party…

Mexican Layer Dip with a Twist

Game Day recipe | Leave the shredded cheese in the refrigerated section at the store and use Ricos instead for this Mexican layer dip recipe that will have guests lining up for more.

 

Mexican Layer Dip

  • 1 16 oz can refried beans
  • 2 cups sour cream
  • 1/2 package taco seasoning mix
  • 2 teaspoons lemon juice
  • 3 garlic cloves (minced)
  • 1/2 can Rico's Cheese Sauce (Choose your favorite variety)
  • 1 tomato (diced)
  • 2-4 small peppers (diced)
  • 2 avocados (pitted and mashed)
  1. Spread beans in the bottom of a glass dish. Combine sour cream and seasoning mix and spread over beans. Mix avocados, lemon juice and garlic; layer over sour cream mixture. Sprinkle with Ricos Cheese of your choice (I used Premium Nacho Cheese). Top with tomatoes and peppers. Serve with tortilla chips.

Since the Big Game is as much about the commercials as the football, here’s my idea of a Ricos halftime commercial What can I say, it’s totally CHEESY! Considering the cost of a Big Game ad this year is $ 5 million for a 30 second spot, this would be one expensive commercial! My friend David Rice from our Praise Band at church wrote the music and played keyboards to my lyrics and singing. Hope you like it!
